The Bible also speaks of new heavens and a new earth (Isaiah 65:17; II Peter 3:13; Revelation 21:1), and the new creature that we as Christians are in Christ (II Corinthians 5:17). So is anything under the sun “new”?

There is nothing truly new under the sun of things that are done by man.
New heavens and a new earth do not apply to this argument since they’re not “under the sun.” Isaiah 43:19 speaks of God doing something new, not man, and the new creature that we are in Christ is not the work of man but of God. Solomon in Ecclesiastes is speaking of the work of man (labor is mentioned in verse 8). Furthermore, Ecclesiastes is written from a perspective of earth without God, and when we look at earth in a purely material way, we would realize that all is vanity; however, we know that all is not vanity if we take God into account.
