However, Mark 5:1-2 and Luke 8:26-27 mention only one man possessed with devils.

There were two men possessed with devils. Mark and Luke only focus on one of them, but this is not a contradiction.
There is not enough space for the authors to include every detail, and so different gospel writers included different details. Mark and Luke focus on this one particular man because they want to highlight this man’s gratitude toward Christ and his willingness to spread the gospel to his family and friends. Matthew, on the other hand, gives more of a summary and mentions both men.
