In Genesis 6:3, God is not saying that the human lifespan will be 120 years, but that man collectively had 120 years before the flood would destroy them. Psalm 90:10 says that the general lifespan of man is 70 years (it mentions that some live longer like, say, 80 years). This is a general rule, not an absolute upper limit; and this general rule is roughly true even today. Although many men lived much longer than 70 years before the Flood and shortly after, by the time Psalm 90:10 was written the average was about 70.
