Actually, we have not observed evolution in the fruit fly experiments. In fact, we have observed the direct opposite, de-evolution. Many weak, deformed, and sickly flies were produced as a result of the mutations, but the fruit flies gained no new features.
In fact, one of the scientists behind these experiments, Eric Francis Wieschaus, admitted that his experiments did not provide much evidence for macroevolution. 1
